Description

Pumpkin, Spinach & Feta Risotto begins by sautéing onions and garlic in olive oil until softened. Diced pumpkin (or butternut squash) is added and cooked until tender. Arborio rice is then added and toasted briefly before deglazing the pan with white wine.
